Chicken Pot Pie Soup
Chicken vegetable soup with pie crust biscuits.
Ingredients for Soup
- chicken (I used 5 frozen chicken breasts)
- 1 small chopped onion
- 3 sliced carrots
- 5 med size potatoes cubed
- 1 cup frozen peas
- 1 cup frozen corn
- 1 cup frozen beans
- 1 large carton of chicken stock
- 4 cups of water
- 2 tablespoons chicken stock paste or bullion granules
- 3pkg chicken gravy
- 1 cup flour (use more or less depending on how thick you like it)
- 1 1/2 cups milk
- pepper to taste
- salt to taste
Ingredients for Pie Crust Biscuits
- 2 sticks of Butter (the real stuff)
- 3-4 cups of flour
- 1/2 cup of water
Ingredients: Chicken, corn, peas, green beans, carrots, onion, potatoes, celery chicken broth, chicken gravy
Pour box of chicken broth in the stock pot.
Pour water in stock pot.
Place the chicken in the pot. (Mine is frozen chicken breast, you could use left over roasted chicken.. or a whole chicken. I’m not a whole chicken kind of girl they freak me out.)
Add chopped onion…
Chopped carrots..
Add the cubed potatoes.
Add 2 tablespoons of chicken paste or 4 bullion cubes. Let vegetables and
chicken simmer and come to a boil. When the chicken is done..
Shred or cube it.. (whichever is your preference). Then add it back to the pot.
Add frozen vegetables.. I like peas, corn and green beans. Turn on med to
low heat to simmer.
In a separate bowl add chicken gravy packets. (I buy gravy in the economy size
so.. I’m adding about 3/4 of a cup)
add 1 cup of flour to the bowl with the chicken gravy.
Add the milk to the gravy and flour.
mix together so there are no lumps.
Pour it in the pot with the chicken and the vegetables…
Mix together and turn the heat up to boil. Once it’s thick turn down to simmer.
Pie Crust
You could use a store bought pie crust.. but why?
Put both butter sticks in the mix and beat.. once the butter is soft…
Add flour… and salt
Start mix together…
Add water.. and mix together…
Until it looks like pie dough..
I dump the mixture on a floured surface.. and press into a pile.
Roll out dough to about 1/4″ thick.
I usually have to flip it a few times…
I cut my pie crust into round 2″ circles. I used to make it the size of the
bowls, but the family wanted 3-4 of those in their in their bowl.. I moved
to a smaller size so they could have more. Hey.. it works for the cereal companies..
it can work for me.
Put them out on a cookie sheet .. bake in a 375 degree oven for 10-15 minutes.
This soup will warm you up on a cold evening.
