Sopapilla Cheesecake & Peach Schnapps Sauce
I got this recipe from my sister in law. It is super easy.. and so good.
I’ve kicked it up with a Peach Schnapps Sauce… but it is so good just
by it’s self.
I forgot to show the butter in this photo.. and the pictures are not fabulous..
why? My photographer was gone.. so I took the photos while I worked..
which made them blurry or just not great.
Here’s what you’ll need:
Sopapilla Cheesecake
- 2 (8 ounce) packages cream cheese
- 2 (8 ounce) tubes refrigerated crescent dinner rolls
- 1 cup + 3 TBLS sugar
- 1/2 cup butter, melted
- 4TBLS cinnamon (2 go in the cream cheese and 2 go on top of the finished product)
Using a 9 x 13 baking pan, unroll one package of refrigerated crescent rolls and line the bottom of the pan.
Flatten.
Mix together the cream cheese, sugar and extract.
Spread over the crescent rolls.
Unroll the other can of crescent rolls and place on top of cream cheese mixture.
Pour one stick of melted butter or margarine over the top and sprinkle with about 1/2 cup of the cinnamon sugar mixture.
Bake at 350 degrees for 30 minutes.
Here’s what you need:
Peach Schnapps Sauce
- 2 or 3 peaches thinly sliced
- 3 TBS butter
- 1/4 cup Peach Schnapps
- 1/2 cup Peach Jelly or Preserves
- 1/4 cup water
- 1/2 cup brown sugar
- 4 TBSP Cinnamon
Melt Butter in a sauce pan
Add sliced peaches turn heat up to med-high
Add 1/4 cup Peach Schnapps, jelly, water brown sugar and cinnamon to the sauce pan.
Stir and turn heat up. Let boil until it has thickened. Once it’s the thickness you want take it off the burner and serve over the Sopapilla cheesecake and ice cream.

Using a 9 x 13 baking pan, unroll one package of refrigerated crescent rolls and line the bottom of the pan. Flatten.
I used soften cream cheese and “whipped” it on with my stand mixer.
Mix together the cream cheese, sugar and 2TBS Cinnamon.
It looks like this whipped.. and I think it spreads and tastes better.
Spread over the crescent rolls.
Unroll the other can of crescent rolls and place on top of cream cheese mixture.
Pour one stick of melted butter or margarine over the top
Sprinkle with the remaining cinnamon and sugar on top. Bake at 350 degrees for 30 minutes.
It’s delicious just like this…
Peach Schnapps Sauce
Slice up peaches.
I’ve got the butter and cinnamon melting here..
Melt Butter in a sauce pan.
Add sliced peaches turn heat up to med-high

Peanut Butter Marshmallow Treats
The Man loves peanut butter… I’m always looking for something with peanut butter that will make him happy. A few weeks ago someone made Rice Crispy Treats with this hard coating type frosting. After eating those, I thought why not make them with Captain Crunch instead of Rice Krispies? So here they are.. I hope you like them!
These are so good. If you like peanut butter you will love these.
The ingredients are super easy.. Peanut Butter Captain Crunch,
marshmallows, butter, peanut butter chips, peanut butter
and if you really love peanuts you can add those too.
Melt 4 tablespoons of butter.
Add a bag of marshmallows stir until melted.
Add Peanut Butter Chips to bowl..
Add 1/2 of the big box or all of a small box of Captain Crunch
Peanut Butter crunch cereal.
Add melted marshmallows, and 1/2 cup of peanut butter.
Mix together. Make sure all the peanut butter chips and cereal
have been coated with marshmallow.
Add to 13×9 pan.
Let cool and serve!
Peanut Butter Marshmallow Treats
- 4 tablespoons butter or margarine
- 1 package (10 oz.) regular marshmallows
- 12 oz Captain Crunch Peanut Butter Cereal
- 1/2 cup crunchy peanut butter
- 1 bag peanut butter chips
- 1/2 cup peanuts (optional)
Directions:
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. To a large bowl add Captain Crunch Peanut Butter cereal, peanut butter chips, peanut butter and melted marshmallows. Stir until well coated.
3. Using buttered spatula or your hands, evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Let cool and serve!
